Atlantic Cod with Mango Salsa



  • 4 (6-8 oz) Atlantic Cod Fillets

  • 1 diced mango

  • 2 sliced cucumbers

  • 1 lime (juiced)

  • 1 lemon (juiced)

  • 2 tbsp. fresh basil

  • 2 tsp. Paprika

  • 1 green onion

  • salt & pepper

  • 4 chopped roma tomatoes

  • 1/4 cup vegetable oil



  1. Combine the mango, tomatoes, half of the cucumber, lime juice, lemon juice, and basil in a bowl. Preheat oven to high heat at 375°F. Season the cod fillets with salt, pepper and paprika. Brush the cod fillets with the vegetable oil.

  2. Broil the cod fillets about 3 mins per side. Serve cod over remaining cucumber slices and top with mango salsa. Garnish with green onions.
