
Atlantic Cod with Mango Salsa
Ingredients:

4 (6-8 oz) Atlantic Cod Fillets

1 diced mango

2 sliced cucumbers

1 lime (juiced)

1 lemon (juiced)

2 tbsp. fresh basil

2 tsp. Paprika
-
1 green onion
-
salt & pepper

4 chopped roma tomatoes

1/4 cup vegetable oil
Directions:

Combine the mango, tomatoes, half of the cucumber, lime juice, lemon juice, and basil in a bowl. Preheat oven to high heat at 375°F. Season the cod fillets with salt, pepper and paprika. Brush the cod fillets with the vegetable oil.

Broil the cod fillets about 3 mins per side. Serve cod over remaining cucumber slices and top with mango salsa. Garnish with green onions.
