Gluten Free Black Pepper Cod

Topped with caramelized onions.


Ingredients:

1 Toppits Gluten-Free Black Pepper Cod box

1 cup of roasted potatoes, chopped up for oven roasting

1 red bell pepper

1 cup fresh baby arugula

8 tbsp. balsamic vinegar

½ red onion

2 sprigs of rosemary, chopped

4 sprigs of rosemary, for garnish

olive oil

garlic powder

black pepper


Directions:

1. Cook Toppits Gluten-Free Black Pepper Cod per the package ingredients.

2. Bake the roasted potatoes at 450°F for 20-25 minutes in oil oil and season with garlic powder, rosemary and black pepper.

2. Thinly slice the onion and red bell pepper and place in a hot pan. Add in balsamic vinegar. 

3. Reduce the mixture until the onions and peppers are soft and add in the chopped rosemary and roasted potatoes and mix.


To plate:

Place the arugula in the middle of the plate and add the potato and red pepper mixture on top. Place the cooked fish next, and top off with the caramelized onions. Garnish with a sprig of rosemary.
