Grilled Salmon Skewers

Summer is in full swing and bbq grills are hot! The best part of summer is gathering with friends and family and sharing delicious meals straight off the grill. Our Toppits Grilled Salmon Skewers are going to be a huge hit at your next bbq!

Makes approximately 4 skewers


Ingredients:

  1. 1 large red/yellow pepper

  2. 1 zucchini

  3. 1/4 cup olive oil

  4. 1 lemon

  5. Salt & Pepper, to taste

  6. Herbs of choice garnish (optional)

  7. Skewers (wood or metal)


Instructions:


1. Defrost Toppits Atlantic Salmon portions according to package instructions

2. Cut each salmon portion into about 4-5 pieces, place into a bowl and coat with about 2tbsp of olive oil. Season with salt & pepper to taste

3. Cut vegetables into small squares, place them into a bowl and coat with about 2tbsp of olive oil. Season with salt & pepper to taste

4. Skewer salmon and veggies, in alternating sequences. Leave some room at the base of the skewer so that you can handle them easily

5. Grill each skewer on a pre-heated grill at medium heat for about 5 min per side, turning once.until fish is cooked through and veggies have softened

6. Drizzle with fresh lemon juice before serving, and garnish with your herbs of choice


* If using wood skewers, we recommend soaking them for 1-2 hours in water to prevent burning
