Smoked Salmon on a Mini Potato Rosti

 

Ingredients:

  • 250g Gustavsen Smoked Salmon

  • 2 lbs. potatoes

  • 2 tbsp. coarsely chopped fresh chives

  • 1/4 cup butter, melted

  • 1/2 cup olive oil

  • 2 tbsp. finely chopped red onion

  • 2 tbsp. capers, drained

  • Onion sprouts and lemon rind to garnish

 

Directions:

  1. Boil or steam unpeeled whole potatoes for 5 minutes, then drain.  Let potatoes cool for 20 minutes, then peel off skin, and grate coarsely. 

  2. Combine shredded potato in medium bowl with chives and butter.  Heat half of the oil in a medium frying pan. 

  3. Shape a teaspoon of the potato mixture into small patties.  Place patties in frying pan, and cook until browned and crisp on both sides, turning once.

  4. Remove from heat and pat off excess oil with a paper towel.  When still warm, top with a slice of smoked salmon, and garnish each with red onion, capers, onion sprouts and lemon rind.
