Toppits Gluten-Free Black Pepper Cod Topped with Carmelized Onions

 

Ingredients:

 

• 1 Toppits Gluten-Free Black Pepper Cod box

• 1 Toppits Roasted Potato and Red Pepper

   Mix bag

• 4 Toppits Carmelized Onion Cubes

  (Only available at Toppits Seafood Market)

• 1 cup fresh baby arugula

• 8 tbsp. balsamic vinegar

• ½ red onion

• 2 sprigs of rosemary, chopped

• 4 sprigs of rosemary, for garnish

 

Directions:

1. Cook Toppits Gluten-Free Black Pepper Cod and Toppits Roasted Potato and Red Pepper Mix as per the instructions on the package.

2. Thinly slice the red onion and place in a hot pan. Add in Toppits Carmelized Onion Cubes and the balsamic vinegar.   

3. Reduce the mixture until the onions are soft and add in the chopped rosemary.

 

To plate:

Place the arugula in the middle of the plate and add the potato and roasted red pepper mixture on top. Place the cooked fish next, and top off with the balsamic

caramelized onions. Garnish with a sprig of rosemary.
