Ontario Ghost Pepper Tuna Tartare Served on Grilled Golden Pineapple
Ingredients:

1 Sea Delight Tuna Saku Block
-
1 scallion finely chopped
-
Zest of one lime
-
1 yellow pepper finely diced
-
1 roma tomato finely diced
-
1 tbsp. black sesame seeds
-
1 tbsp. chiffonade mint
-
1 tsp. ghost pepper sauce
-
1 tbsp. hoisin
-
1 tsp. tamari
Directions:

Finely dice tuna saku block. Place in fridge while preparing other ingredients.

In a small bowl, mix all diced ingredients and gently fold in fresh tuna.

Grill 3 slices of golden pineapple over medium heat until grill marks are visible.
-
Combine by stacking layers of pineapple with other ingredients and serve.
