250 g Smoked Salmon, Atlantic, Coho or Steelhead
2 lb potatoes
2 tablespoon fresh chives, coarsely chopped
1/4 cup butter, melted
1/2 cup olive oil
2 tablespoon red onion, finely chopped
2 tablespoon capers, rinsed and drained
Onion sprouts and lemon rind to garnish
Boil or steam unpeeled whole potatoes for 5 minutes, then drain. Let potatoes cool for 20 minutes, then peel off skin and grate coarsely.
Combine shredded potato in medium bowl with chives and butter. Heat half of the oil in a medium frying pan.
Shape a teaspoon of potato mixture into small patties. Place patties in frying pan, and cook until browned and crisp on both sides, turning once.
Top with slice of smoked salmon and garnish each with red onion, capers, onion sprouts and lemon rind.
