Shrimp Creole

Serves 10

 

Ingredients:

  • 3 lbs Toppits Shrimp, 26-30 ct Raw Peeled and Deveined, defrosted

  • 3 tsp. crushed Toppits garlic

  • 1/2 tsp. Toppits Red Chili Peppers (or more if you like it spicy)

  • 1/2 cup butter (or margarine)

  • 5 medium onions, chopped (2 cups)

  • 3 medium green peppers, finely chopped (2 1/2 cups)

  • 4 medium celery stalks, finely chopped (1 1/2 cups)

  • 1 3/4 cups water

  • 1/2 cup fresh parsley, chopped

  • 2 tsp. salt

  • 4 dried bay leaves

  • 2 cans (15 oz) tomato sauce

  • 10 cups hot rice (cooked per package instructions)

 

Directions:

  1. In a 4-quart saucepan, melt butter over medium heat. Cook onions, bell peppers, celery and garlic in butter for about 10 to 15 minutes, stirring occasionally until onions are tender.  Stir in remaining ingredients except rice and raw shrimp.

  2. Bring to a boil and reduce to a simmer, uncovered for 10 minutes.  

  3. Stir in raw shrimp and cover approximately 4 to 6 minutes, stirring occasionally until shrimp are pink and firm. Remove bay leaves.

  4. Serve shrimp mixture over rice.
