Stir Fried Salt & Pepper Squid

Serves 4.

 

Ingredients:

  • 1 ½ lb Toppits Arrow Squid Tubes & Tentacles

  • ½ tsp. black peppercorns

  • ½ tsp. sichuan peppercorns

  • 1 tsp. maldon sea salt flakes

  • 1-2 tsp. canola oil

  • 1 medium-hot red chili pepper thinly sliced (seeds removed, if you prefer)

  • 3 green onions, sliced

 

Directions:

  1. Heat a small frying pan over high heat. 

  2. Add the black and sichuan peppercorns and toast them for a few seconds, shaking the pan until they darken slightly and become aromatic. 

  3. Add peppercorns to a mortar and crush coarsely with the pestle then stir in the sea salt flakes. 

  4. Heat a wok over high heat until smoking, add half the oil and half the squid and stir-fry for 2 minutes, until lightly coloured.  Remove onto a plate, then cook the remaining squid in the same way. 

  5. Return the first batch of squid into the wok and add 1 teaspoon of the salt and pepper mixture (the rest can be used in other stir-fries).  Toss together for about 10 seconds, then add the red chili pepper and green onions and toss together very briefly. 

  6. Divide the squid among four serving plates.  Serve immediately.
