Summer Tacos with Toppits Gluten-Free
Breaded Haddock

Ingredients:

2 Toppits Gluten-Free Breaded Haddock Pieces

4 Corn Tortilla Pieces

1 Avocado, mashed and seasoned

1 cup of Fresh Corn

2 tbsp. of Fresh Cilantro, chopped

1 small Shallot, finely diced
-
1/2 cup Cherry Tomatoes quartered

Squeeze of a lime juice
-
Sour Cream
-
Salt and Pepper to taste
Directions:

Bake the Toppits Gluten-Free Breaded Haddock on a baking sheet lined with parchment at 380°F, for 20 minutes or until golden brown and flesh is white.

Combine the corn, cilantro, shallot, cherry tomatoes, a squeeze of a lime juice and salt and pepper to taste.

To serve, begin by adding the mashed avocado on the bottom, cut the haddock down the center to get 2 long pieces, top with corn salsa and sour cream.
