Served with Braised Purple Cabbage
Ingredients:
1 pc Toppits 4 oz Dusted Halibut
1 large egg yolk
1/2 cup corn meal
1 large keizer bun
1oz fresh arugula
2 slices fresh heirloom tomato
4 oz. purple cabbage
1 oz. brown sugar
2 tbsp apple cider vinegar
2 tbsp butter
1 tsp paprika
2 tsp salt
Directions:
1. Add butter to sautée pan over medium heat. Add red cabbage, brown sugar and apple cider vinegar. Cook until cabbage is tender.
2. In a small bowl, whisk egg until foamy. Place cornmeal, paprika and salt in a shallow bowl. Dredge fish in egg, allowing excess to drip off. Place in corn meal mixture, turning to coat both sides.
3. Gently place crusted halibut in deep fryer and cook until golden brown, for approximately 5 minutes.
