2 lbs Toppits Atlantic Lobster Claw and Knuckle meat
8 Toppits Dill Pop Herbs (or 1/4 cup fresh dill, finely chopped)
8 Toppits Parsley Pop Herbs (or 1/4 cup fresh parsley, finely chopped)
1/4 cup mayonnaise
1/4 greek yogurt
3 inner celery stalks, finely chopped
4 tbsp. lemon juice, freshly squeezed
Salt and pepper to taste
2 tsp. salted butter, melted
6 fresh hotdog rolls, or your favourite style bun
Remove Toppits lobster meat from package, and place in a colander to let moisture drain. Chop any large chunks into bite size pieces and place lobster meat in a large mixing bowl.
Add lemon juice and stir to coat. In a small bowl combine mayonnaise, greek yogurt, celery, dill cubes, parsley cubes and salt and pepper. Wait 2 minutes for the cubes to defrost and blend well. Combine the creamy mixture into lobster chunks and chill in the refrigerator for 30 minutes to one hour. This will allow the Lobster Salad to absorb the flavours. Remix salad before serving.
Brush cut side of the rolls with melted butter and fill with lobster salad and serve.
