Citrus Orange Roughy



In 1983, this delicious white fish became synonymous with Toppits. Orange Roughy is known for its delicate flavour and soft, large flakes. Easily paired with various spices and sauces, like this zesty orange sauce.

Cook Time: 25 minutes


Ingredients:

1/4 cup orange juice

1/2 teaspoon flour

1/2 dash nutmeg

1/2 tablespoon butter

1 teaspoon lemon juice

1 tablespoon capers

1/4 cup sweet red pepper

1 teaspoon of salt and pepper, or to taste

Orange slices (optional)


Directions:

  1. Defrost the Orange Roughy according do the package. Once thawed, rinse fillets and pat dry. Set aside. Preheat the oven to 400°F. Place parchment paper on a baking sheet. Drizzle with some olive oil. Place fillets on the baking sheet. Add a salt and pepper to taste. Place in oven and cook for 15-20 minutes or until fish flakes easily.

  2. In a pot, melt the butter and add flour, stirring until well blended. Mix in orange juice, nutmeg, lemon juice, capers and sweet red peppers. Stirring over low heat until thickened.

  3. Pour orange sauce over the fish and serve immediately.

Optional: Serve with cut up orange slices and side of vegetables like steamed beans.


Note: Cooking instructions are guidelines only. Cook fish until an internal temperature of 158 °F (70 °C).
